In last week’s video I discussed the major differences between curry powders and how important it is to read the ingredients. As promised, this week I’m going to show you how I make one of my favourite curries!
Below are the ingredients and method, but watch the video for the full explanation and some hints and tips!
What You’ll Need:
- 1 onion, chopped
- 1 clove of garlic, chopped
- 1 large sweet potato, cut into small cubes
- 1 packet of green beans
- 1 tin of chickpeas, drained and rinsed
- 1 tin of coconut milk
- 2 tablespoons of curry powder (I use the Tesco Medium Curry Powder)
- Olive oil
How It’s Done:
- Add a little olive oil (or whatever oil you use) to a suitable pan
- Add the onion and garlic and allow to cook for a minute or two
- Add the sweet potato and curry powder and mix well before adding the coconut milk
- Bring to the boil and allow to simmer for about 10-15 minutes (you will need to add some water as well as the coconut milk reduces, to ensure the sweet potato are always covered with liquid)
- Add the green beans and chickpeas and a little more water
- Simmer for another 10 minutes until the sweet potato is cooked throughout (be careful not to overcook it or it will start to become mushy!)
- Serve with some brown rice
