Recipe Video – Sweet Potato & Chickpea Curry

By Lisa Dunbar | Recipes and Videos | 0 comment | 22 November, 2019 | 2

In last week’s video I discussed the major differences between curry powders and how important it is to read the ingredients. As promised, this week I’m going to show you how I make one of my favourite curries!

Below are the ingredients and method, but watch the video for the full explanation and some hints and tips!

What You’ll Need:

  • 1 onion, chopped
  • 1 clove of garlic, chopped
  • 1 large sweet potato, cut into small cubes
  • 1 packet of green beans
  • 1 tin of chickpeas, drained and rinsed
  • 1 tin of coconut milk
  • 2 tablespoons of curry powder (I use the Tesco Medium Curry Powder)
  • Olive oil

How It’s Done:

  • Add a little olive oil (or whatever oil you use) to a suitable pan
  • Add the onion and garlic and allow to cook for a minute or two
  • Add the sweet potato and curry powder and mix well before adding the coconut milk
  • Bring to the boil and allow to simmer for about 10-15 minutes (you will need to add some water as well as the coconut milk reduces, to ensure the sweet potato are always covered with liquid)
  • Add the green beans and chickpeas and a little more water
  • Simmer for another 10 minutes until the sweet potato is cooked throughout (be careful not to overcook it or it will start to become mushy!)
  • Serve with some brown rice
