What You’ll Need:
- 3 cups/250g oats
- 1 teaspoon baking powder
- 3 ripe bananas
- 4 tablespoons olive oil
- 2 tablespoons molasses
- 1 inch square of ginger, grated finely
How It’s Done:
- Preheat oven to 180° celsius
- Add the oats and baking powder to a large bowl and mix well
- In a separate bowl, mash the 3 bananas and add the olive oil, molasses and ginger. Mix well. (You could use a food processor to do this!)
- Pour the wet mixture into the bowl of oats and mix well
- Spoon mixture into a loaf tin lined with baking paper
- Place in the oven for 35-40 minutes, depending on your own oven. It should be ready once the outside goes brown
- Remove from the loaf tin and allow to cool for an hour on a baking tray before cutting
