Eat Peppers

Eat Peppers!

  WHY?  

Whether you choose green, yellow, orange or red, all peppers are a great source of many vitamins and minerals, especially Vitamin C (for strong immunity) and Vitamin A (for healthy skin, eyes and bones)

  HOW?

  • Peppers are excellent eaten raw – add them to salads or cut them into strips and eat them on their own as a snack or dip them into hummus
  • Peppers are a great ‘filler’ vegetable and can be thrown into stir frys, curries, soups, etc
  • Peppers are especially delicious roasted – combine them with some courgette and red onion for a tasty side of roast veg, or use half a roast pepper as an edible ‘pot’ for some spicy rice or couscous
