- Peppers are excellent eaten raw – add them to salads or cut them into strips and eat them on their own as a snack or dip them into hummus
- Peppers are a great ‘filler’ vegetable and can be thrown into stir frys, curries, soups, etc
- Peppers are especially delicious roasted – combine them with some courgette and red onion for a tasty side of roast veg, or use half a roast pepper as an edible ‘pot’ for some spicy rice or couscous
