Because whether you call it a courgette or a zucchini, this juicy vegetable deserves a place on your plate! It contains vitamin C (for strong immunity) and potassium (for a healthy heart and blood). The skin is also a good source of fibre (to keep your bowels happy!) and since it’s mostly water it’s also lovely and hydrating!
- Chopped up in stir fries, bolognese, curries, on top of pizza
- Roasted with other veg/meat in a bit of oil and seasoning
- Grated raw into salads
- I even blend mine into smoothies to thicken them up!
