Because Popeye was no fool! Spinach is an excellent source of various vitamins and minerals, those little things that help our bodies work properly! Especially Vitamin A (for good eyesight, lovely skin, strong immunity) and Vitamin K (for healthy blood and bones).
• Use it as a base for salads
• Use it in home-made juices/smoothies – I always blitz a handful into my chocolate smoothie!
• Add to scrambled eggs, omelettes, curries, stews, bolognese, soups (it only takes a few minutes to ‘wilt’ so just add it at the end!)
• Saute for a few minutes and serve as a side dish
