Cos cauliflower is making a comeback! Cauliflower, like all veggies, contains lots of fibre (for healthy digestion) and is also high in Vitamin C (for strong immunity). Cauliflower is also a great source of a little-known nutrient called choline which is really important for brain development and brain function into later life.
- I think most of us can appreciate by now that the best way to enjoy cauliflower is not to boil the hell out of it, otherwise it gets soggy and smelly! This is why we are seeing things like ‘cauliflower rice’ and ‘cauliflower steak’ popping up on menus
- Cauliflower is delicious roasted in a little oil and seasoning
- Add it to salads, soups and curries
