Because this vibrant wonder makes any dish look pretty! I was put off beetroot as a child because I only ever experienced it from a jar, pickled in vinegar! But minus the vinegar this veg is amazingly sweet and earthy! It contains lots of vitamins and minerals, as well as things called nitrates which can help with blood flow – this is why beetroot has been used since ancient times as a ‘natural Viagra’!
- Of course you can buy it raw and cook it yourself, but you can also buy it vacuum packed – cooked and ready to eat for your convenience! (Remember to get it without vinegar!)
- Chop it up and add it cold to salads
- Coat some chunks of it in oil and seasoning and roast it to make a delicious side dish
- Throw it into juices, smoothies, hummus or pureed soups
